Alemu selectively picks ripe cherries and tomatoes and processes them on his farm. He seals the cherries in airtight containers and ferments them for 72 hours.
After fermentation, he places the cherries on his 12 raised beds to dry. Alemu rakes the dried cherries every hour to ensure even drying.
He also covers cherries during the hottest part of the day and at night to prevent condensation. It takes about 16 days for the cherries to dry.
